Shaker Lemon Pie (its not just for shakers anymore)
It could also be for anyone, you do not need to have contacts in the shaker community to eat this pie, conversely, just by eating this pie once, does not mean you are a shaker, or no longer a member of a community or state that you have lived in for say…15 years.
- 2 lemons, thinly sliced
- 2 cups sugar
- 4 eggs, beaten
- 1 double pie crust
- Slice the lemons and combine in a large bowl with the 2 cups sugar. Let stand for at least 6 hours, preferably overnight.
- Add the beaten eggs and mix well. Pour into an unbaked 9 inch piecrust and cover with a top crust.
- Brush the top with milk and sprinkle sugar on top.
- Bake at 450 degrees F for 15 minutes, then reduce heat to 375 degrees F and bake for an additional 20 to 25 minutes, or until a knife inserted into the pie comes out clean. Mind you the knife is not actually clean now, you need to wash it before you do anything else with it.
